Not that old that it is bright yellow but just enough so it is ripe, rich and buttery with a good lick of new French oak. In stepped Butter Barrels, we source the fruit for this wine about 3 4 weeks later than the LS Merchants Chardonnay allowing the fruit time to ripen up and get nice and peachy. Wild ferment in

In stepped Butter Barrels, we source the fruit for this wine about 3-4 weeks later than the LS Merchants Chardonnay allowing the fruit time to ripen up and get nice and peachy. Wild ferment in French oak, 40% new, with liberal stirring and a big dose of malo to boost up the buttery flavours.

Aged in oak before being racked, filtered and bottled.

Think yellow stone fruit, grapefruit pith, fresh pineapple and jasmine. Rich and full of flavour on the palate with a nice touch of oak and gentle acid giving the wine structure, depth and power! Drink now and over the next 3-5 years.
