Mas Foulaquier bevindt zich in het meest noordelijke deel van de Languedoc, Pic-Saint-Loup (berg van de heilige wolf), een grote berg in Occitanië, zichtbaar vanuit Montpellier. De grond bevat hier veel mee steen en kalk en is door het hoogte verschil een stuk koeler dan in de zuidelijkere delen van dit Mediterrane gebied. Niet voor niets dat Pierre Jéquier (van origine een Zwitserse architect) en zijn partner Blandine Chauchat-Chauchet al meer dan 20 jaar hier de meest terroir gedreven natuurwijn maken. Het stel werkt al vanaf het begin bio-dynamisch, werkt veel met betonnen vaten en amphora's voor het behoud van frisheid en met hele kleine dosages So2. Veel elegantere terroirwijnen kom je niet snel tegen in dit gebied, niet voor niets al jaren lang huiswijn bij Septime in Parijs!
